ELKINS, W.Va. (AP) – West Virginia University Extension Service faculty and staff are working with students at six elementary schools to plant edible landscaping that will provide fresh food for the students.
Extension Service Family Nutrition Program youth health educator Tracey Valach found out one of the schools was planning new landscaping and suggested the school choose fruit-bearing plants. Valach worked with Extension Service agents Hannah Fincham and Jody Carpenter to choose the plants.
With crowdfunding and community support, they purchased blueberry bushes and apple trees for each school.
The students learned how to choose the best location for the plants. Valach says the students will be involved with harvest and other activities with the fruit, including hands-on cooking classes and taste testing. Some of the fruit will also go to the salad bar or be used in cafeteria meals.
